Jacket potatoes with herby cottage cheese
A batch of this topping keeps in the fridge for up to three days.

Ingredients
2 baking potatoes
250g Co-op low fat natural cottage cheese
1/2 x 25g pack Co-op flat leaf parsley, finely chopped
1 tsp dried thyme
4cm piece cucumber, finely diced
1 spring onion, finely sliced
Zest and juice of 1/2 lemon;
Method
1. Preheat the oven to 200°C/fan 180°C/Gas 62. Prick the potatoes all over and bake directly on the middle shelf of the oven for 1 hour 15 mins, until crisp on the outside
3. Meanwhile, mix the cottage cheese with the parsley, thyme, cucumber, spring onion, and lemon zest and juice
4. Season to taste
5. Cut the potatoes open and serve topped with the cottage cheese mixture and an extra scattering of parsley, if you like.
